A full flavoured classic French dish of plump jointed chicken slowly braised with lean bacon, eschalot, field mushrooms, brandy, stock and the wine, of course.
Chef’s suggestion
Serve with your favourite style of potatoes or grain to capture the rich sauce and steamed green vegetables.
